About this range
Gas and electric deck ovens are listed by decks and trays, from 1 deck and 2 trays to 3 decks and 6 trays; a deck oven with a proofer underneath and a 3-in-1 oven and proofer combine baking and proving. There are convection ovens, a convection rack oven that takes a 12-pan trolley, an electric combi steam oven in 6, 10 and 20 pans, and a gas tunnel oven.
A deck holds trays side by side, so "2 decks, 4 trays" means two baking chambers with two trays each. Several listings give internal dimensions as well, which tell you what fits inside. Many electric ovens are listed at 380 V, which needs a three-phase supply.
Proofers in single and double door; dough presses, a dough sheeter, a 36-piece dough divider, a 30-piece rounder, baguette and toast dough moulders, and a bread slicer.
